STRAWBERRY NUT LOAF

3 c. flour
1/4 tsp. salt
2 c. sugar
1 1/4 c. salad oil
3 eggs
1 1/4 c. chopped pecans
2 (10 oz.) pkg. frozen
strawberries, thawed
1 tsp. baking soda
3 tsp. cinnamon

Preheat oven to 350 degrees. Sift together flour, salt, baking
soda, cinnamon and sugar in large bowl. In a medium bowl, mix
together eggs, oil, pecans and strawberries. Fold into sifted
ingredients, stirring just enough to moisten. Spoon into 2
well greased and floured 9 x 3 x 3-inch loaf pans. Bake 1 hour
or until done. Cool on wire rack. Makes 2 (9-inch) loaves.
