ZUCCHINI BREAD 3 eggs 1 c. oil 2 c. sugar 2 tsp. vanilla 2 c. grated, unpeeled zucchini, drained 1/2 c. chopped nuts 3 c. flour 1 tsp. salt 1 tsp. soda 1 tsp. baking powder 3 tsp. cinnamon 1/4 tsp. cloves 1/4 tsp. allspice Sift dry ingredients in large bowl. Mix zucchini, vanilla, eggs and oil. Beat. Add dry ingredients and nuts. Stir and beat 2 minutes. Turn batter into 2 greased and floured 5 x 9-inch loaf pans. Bake at 325 degrees about 50 to 60 minutes.
