PANCAKES OR GRIDDLE CAKES

1 1/4 c. flour
1/2 tsp. salt
1 Tbsp. baking powder
1 Tbsp. sugar
1 beaten egg
1 c. milk
2 Tbsp. melted shortening

Sift flour with salt, baking powder and sugar. Combine
egg, milk and shortening. Add to dry ingredients, stirring
just until flour is moistened. Batter will be lumpy. Bake on
ungreased griddle. Makes 6 to 8 cakes.

Variations:
Blueberry Griddle Cakes: Add 1/2 cup washed and drained
blueberries to batter. When baked, spread with butter; sprin-
kle with brown sugar and roll.
Pineapple Griddle Cakes: Add 1/2 cup drained, crushed
pineapple to batter; serve with butter and strained honey.
Sour Milk Griddle Cakes: Substitute sour milk or
buttermilk for sweet milk. Add 1/2 teaspoon soda and cut
baking powder to 2 teaspoons.
