FUNNEL CAKES

1 c. plus 2 Tbsp. all-purpose
flour
3/4 c. milk
1 tsp. baking powder
1 egg, beaten
dash of salt
powdered sugar

Mix flour, milk, baking powder, salt and beaten egg
thoroughly with wire whisk. Heat oil (Wesson, Crisco or
Mazola) to 370 degrees. Stir batter thoroughly before pouring.
Holding a narrow spouted funnel, 1/2 inch spout, close spout
with finger. Pour 1/4 cup batter into funnel. Over the hot
oil, carefully remove finger and let batter run out in a
stream, while making spirals about 6 inches in diameter. Fry
until golden brown, turning once with tongs. Drain on paper
towels and dust with powdered sugar. Serves 6.
