OLD-FASHIONED PUMPKIN PIE

1 (No. 2 1/2) can pumpkin
1 1/2 c. firmly packed light
brown sugar
4 eggs, well beaten
3 Tbsp. butter or margarine,
melted
2 Tbsp. dark cooking molasses
1 Tbsp. pumpkin pie spices
1 1/4 tsp. salt
1 1/4 c. milk or diluted
evaporated milk (I use
whole 1 1/4 c. Milnot)
2 unbaked pastry in 8-inch pie
plates

Combine pumpkin, sugar and remaining ingredients in
order given: eggs, butter, molasses, spices, salt and milk.
Bake in preheated oven (450 degrees) for 10 minutes. Reduce heat
quickly (leave oven door slightly ajar about 3 minutes to slow
oven to 325 degrees and continue baking for 45 minutes or until knife
comes out clean when inserted in center of filling.
If desired, use 2 teaspoons cinnamon, 3/4 teaspoon
ginger and 3/4 teaspoon nutmeg in place of pie spices.
