ONE CRUST RHUBARB PIE

3 c. finely diced rhubarb
1 c. sugar
3 Tbsp. flour
1 beaten egg
pinch of salt
1 tsp. vanilla
1 unbaked pie shell

Crumbs:
3/4 c. flour
1/2 c. brown sugar
3 Tbsp. butter

Mix together sugar, flour, salt and vanilla; add egg,
add cut rhubarb to mixture, let stand for 10 minutes. Mix
together crumb ingredients. Pour rhubarb mixture into unbaked
pie shell. Cover top with crumb mixture. Bake at 375 degrees for 40
minutes.
