GRANDMA'S LEMON MERINGUE 4 Tbsp. cornstarch 1 c. sugar 3 egg yolks 2 lemons (juice) 1 c. water 1/2 c. cream 1/2 tsp. butter 1 Tbsp. powdered sugar In bowl mix cornstarch, sugar and lemon rind (grated). In another bowl mix egg yolks and lemon juice, then combine with first mixture. Stir cream and water together in pot and boil. Add lemon mixture and cook until mixture thickens. Add the butter and cool. Beat egg whites until stiff. Add pow- dered sugar and cream of tartar. Pour lemon filling in store bought crust. Top with meringue and bake until meringue is light brown.
