HOT CROSS BUNS 5 3/4 c. flour 1 tsp. cinnamon 1/2 tsp. nutmeg 2 tsp. salt 1/2 c. sugar 1/2 c. oil (or melted shortening) 2 eggs, beaten 2 c. milk, scald and cool 2 pkg. dry yeast 2 Tbsp. sugar 1/2 c. raisins 1/2 c. chopped cherries Mix together the milk, dry yeast and sugar. Add 1/2 of the flour to the milk-yeast mixture. Cover and let rise until bubbly, 35 to 40 minutes. Add shortening, remaining sugar, eggs, remaining flour and spices (raisins and cherries). Beat; add more flour if necessary. Knead; let rise to double. Roll out, cut into buns. Place on baking sheet. Rise one hour. Bake at 400 degrees for 15 minutes. Cool slightly. Makes 4 dozen. Cross with confectioners sugar icing.
