SCOTCH MUFFINS 1 c. all-purpose flour 2 tsp. baking powder 1/8 tsp. soda 1/2 tsp. salt 1 c. quick cooking oats 1/2 c. sugar 1/2 c. finely chopped nuts 1 c. chopped dried figs 2 Tbsp. salad oil 2 well beaten eggs 1 c. buttermilk Combine flour, baking powder, soda and salt; add oats, sugar, nuts and figs. Combine oil, eggs and buttermilk; add to flour mixture, stirring just enough to moisten dry ingredients. Fill greased muffin pans two thirds full. Bake at 375 degrees for 25 to 30 minutes. Yield: 15 large muffins.
