UNBELIEVABLE LEMON PIE 1 (14 oz.) can sweetened condensed milk 1 c. water 1/2 c. reconstituted lemon juice 1/2 c. biscuit mix 3 eggs 1/4 c. butter 1 1/2 tsp. vanilla 1 c. flaked coconut Preheat oven to 350 degrees. Combine all ingredients except coconut in blender. Blend on low for 3 minutes. Pour into 10-inch pie plate. Let stand 5 minutes. Sprinkle coconut on top. Bake for 35 to 40 minutes or until knife inserted near edge comes out clean. Cool slightly and serve warm or cool. Serves 6.
