HORSE LOVER'S BREAD

2 pkg. dry yeast
1 c. white flour
1/2 c. rye flour
1 1/2 c. whole wheat flour
2 c. milk
1/4 c. brown sugar or 1/8 c.
honey
1 scant Tbsp. salt
3 Tbsp. shortening
2 Tbsp. molasses
2 1/4 to 2 1/2 c. additional
white flour

Combine yeast and flours. Heat together milk, brown
sugar or honey, salt, shortening and molasses. Stir until
warm. Add to dry ingredients. Beat at low speed of mixer for
1/2 minute. Beat 3 minutes at high speed. Stir in rest of
white flour to make a moderately stiff dough. Knead 5 to 8
minutes. Place greased bowl, turning once. Cover. Let rise
until double about 1 1/2 hours. Punch down. Divide into
loaves. Let rise 10 minutes. Place in pans. Let rise 45 to
60 minutes. Bake at 375 degrees for 35 minutes. One cup of wheat
germ could be added.
