WHEAT GERM ZUCCHINI BREAD

3 eggs
1 c. salad oil
1 c. each white and brown
sugar
2 tsp. vanilla
2 c. shredded zucchini
3 tsp. cinnamon
2 c. white flour
1/2 c. whole wheat germ
2 Tbsp. baking soda
2 tsp. salt
1/2 tsp. baking powder
1 c. chopped walnuts

Beat eggs and add oil, white and brown sugar and vanil-
la. Beat until thick and foamy. Stir in zucchini. Combine
remaining ingredients until blended. Pour into two 5 x 9-inch
greased loaf pans. Bake at 350 degrees for about 50 minutes. Cool 10
minutes and remove from the pans.
