COTTAGE CHEESE PINWHEEL ROLLS

1 pkg. dry yeast
2 1/2 c. sifted flour
1 tsp. salt
1 egg, beaten
1/2 c. butter/margarine

Filling:
3 Tbsp. melted butter
1/2 tsp. vanilla
1 c. chopped nuts
1/4 c. warm water
1/4 c. sugar
12 oz. cream-style cottage
cheese
3/4 c. brown sugar
1/2 tsp. almond extract

Mix and sift flour, sugar and salt. Cut in butter until
mixture resembles coarse fine meal. Dissolve yeast in warm
water. Add cottage cheese, egg and dissolved yeast. Mix well.
(If necessary, add more flour so dough can be handled easily.)
Roll out on lightly floured board to a 14 inch square. Combine
filling ingredients. Spread on dough, roll like a jelly roll.
Cut into 18 slices. Put on greased baking sheet and let rise
(1 1/2 hours or until double in bulk). Bake in moderate oven
at 375 degrees for 20 to 25 minutes. Yield: 18 pinwheel rolls.
