PINEAPPLE ZUCCHINI BREAD 3 eggs 1 3/4 c. sugar 1 c. oil 2 tsp. vanilla 1 3/4 c. grated zucchini 1 (10 oz.) can crushed pineapple, well drained 3 c. flour 1 tsp. salt 1 tsp. soda 1/4 tsp. baking powder 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg Beat eggs until light and fluffy, add sugar and continue beating. Stir in oil, vanilla, zucchini and pineapple. Mix in dry ingredients. Pour into 2 greased and floured loaf pans. Bake at 350 degrees for 50 minutes. Remove from pan. Chill well before slicing.
