WELSHKORN-EISHTAR PUFFERS
(Oyster Corn Fritters)
2 c. cream style corn
2 eggs, separated
2 Tbsp. flour
1/2 tsp. salt
1/4 tsp. black pepper

With corn, blend the egg yolks (beaten), flour and
seasonings. Beat the egg whites until rounded peaks are
formed. Fold into corn mixture until blended. Drop by tea-
spoonfuls onto a hot buttered skillet and brown about 2 minutes
on each side. Makes about 3 dozen.
