PUMPKIN ROLL 3 eggs, beaten for 5 minutes at high speed 1 c. sugar 2/3 c. pumpkin 3/4 c. flour 1 tsp. baking powder 2 tsp. cinnamon 1 tsp. ginger 1/2 tsp. nutmeg 1/2 tsp. salt Mix eggs, sugar and pumpkin well, then add remaining ingredients. Bake on greased and floured cookie sheet at 375 degrees for 15 minutes. When done, turn over onto towel (straight from oven turn onto towel so it won't stick). Sprinkle with flour and powdered sugar, then roll while still hot (roll the width not the length). Let cool. Filling: 1 c. powdered sugar 2 (3 oz.) pkg. cream cheese 4 Tbsp. butter, soft 1/2 tsp. vanilla Blend together; unfold roll. Spread on cooled roll. Roll it again. Then chill.
