CARROT BREAD 2/3 c. cooking oil 1 c. sugar 2 eggs 1 1/2 c. flour 1/2 tsp. baking powder 1 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. salt 1/2 tsp. soda 1 c. grated carrots 3/4 c. chopped pecans Beat eggs. Add oil and sugar. Mix well. Combine dry ingredients and add. Add grated carrots. Pour into greased loaf pan and bake for 1 hour at 350 degrees (test after 45 minutes).
