PUFFS OR ECLAIRS

1 stick (4 oz.) butter
1 c. water
1 c. unsifted flour
5 or 6 medium eggs

Boil together the butter and water until the butter has
melted. Add the flour all at once and stir for a few minutes
over medium heat until the whole forms a ball of dough which
leaves the sides of the pan. Turn out into a large bowl and
beat in the eggs one by one, waiting until one is completely
absorbed before adding the next. Form puffs or eclairs on a
lightly greased cookie sheet and bake in a preheated oven at
475 degrees for about 10 minutes or until well risen and beginning to
brown. Decrease the heat to 325 degrees and continue to bake approxi-
mately 20 minutes or so. Remove from oven, slit so steam can
escape. Cool and fill. Makes about one dozen.
