ZUCCHINI PINEAPPLE BREAD 2 c. sugar 3 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 3 tsp. cinnamon 2 c. zucchini 3 eggs 1 c. oil 3 tsp. vanilla 1 c. walnuts 1 (8 oz.) can crushed pineapple 1/2 c. raisins (optional) Measure dry ingredients in bowl. Set aside. Blend eggs, oil, vanilla, zucchini and pineapple; slowly add dry mixture. Grease and flour loaf pan. Bake at 325 degrees for about an hour.
