ZUCCHINI BREAD 3 eggs 3 c. sugar 3 c. peeled and grated zucchini 1 c. vegetable oil 3 tsp. vanilla 3 c. flour 1 tsp. salt 3 tsp. cinnamon 1 tsp. baking soda 1/4 tsp. baking powder 1/2 c. nuts Mix eggs, sugar, zucchini, oil and vanilla. Mix sepa- rately flour, salt, cinnamon, baking soda and baking powder. Add dry ingredients to wet, gradually until mixed. Stir in nuts. Bake in ungreased loaf pans at 350 degrees for 1 hour.
