PUMPKIN BREAD 3 1/2 c. flour 2 tsp. soda 1/2 tsp. baking powder 1 1/2 tsp. salt 3 1/4 c. sugar 1 c. liquid shortening 2 tsp. mixed spices (cinnamon, nutmeg, cloves or pumpkin pie spice) 4 eggs 2 c. canned pumpkin 2/3 c. water Heat oven to 350 degrees. Grease and flour 4 (1 pound) coffee cans or small loaf pans. Sift flour, soda, baking powder, salt and spices and set aside. Mix sugar, shortening, eggs, pumpkin and water. Add sifted ingredients and beat with mixer until well blended. Divide into 4 coffee cans and bake 1 hour. Fill loaf pans 2/3 full and bake 30 minutes. Makes 14 mini loaves.
