FRIED APPLE PIE

8 to 12 apples (Gravenstein
are best)
1 1/4 to 2 c. sugar
crust for 9-inch pie
2 tsp. cinnamon

Peel, core and slice apples as for any apple pie. Use
about 3 more apples than you would normally. Mix sugar with
the apples and put into a large iron skillet or heavy bottomed
saucepan. Put on high flame on a gas stove or medium-high on
an electric stove. Do not add any liquid; the sugar will juice
out the apples. Cook until done and some of the liquid has
evaporated, but not completely. Turn into prepared crust and
sprinkle with cinnamon. Quickly put on top crust. Put immedi-
ately into preheated 450 degrees oven. Bake 15 to 20 minutes until
crust is browned. No more poofy crusts. Filling may be made
ahead and refrigerated or frozen.
