BIG APPLE PIE 5 lb. apples (12 to 15 c.), sliced thinly 3/4 c. granulated sugar 3/4 c. brown sugar 1 tsp. cinnamon 1/4 tsp. salt 1/2 tsp. nutmeg lemon juice 1 recipe egg yolk pastry (follows) Roll out 1/2 egg yolk pastry. Line a 15 1/2 x 10 1/2-inch jellyroll pan. Sprinkle lemon juice on apples. Place half of apples in pastry-lined pan. Combine remaining ingredi- ents and sprinkle half over apples; dot with butter. Add remaining apples, then balance of sugar-spice mixture. Top with remaining crust. Brush with milk and sugar. Cut vents or prick air holes with fork. Bake in hot oven, 400 degrees, for 50 minutes. Egg Yolk Pastry: 5 c. flour 4 tsp. sugar 1/2 tsp. salt 1/2 tsp. baking powder 1 1/2 c. lard or 2 c. shortening 2 egg yolks or 1 whole egg water Add water to egg to make 1 cup liquid. Mix ingredients.
