BRAN MUFFINS 2 c. bran 1 c. buttermilk 1/2 c. shortening 1 tsp. salt 1 egg 1 c. flour 1 tsp. baking powder 1/2 c. brown sugar 1 tsp. soda Heat oven to 400 degrees. Grease bottom of muffin tin. Let bran soak in buttermilk to soften. Mix shortening, sugar and egg well. Measure flour by sifting. Blend dry ingredients and stir into shortening. Mix alternately with soaked bran and shortening. Fill muffin tins 2/3 full. Bake 20 to 25 minutes at 400 degrees. Serve hot. Yields: 12 medium muffins.
