TACO CASSEROLE

1 lb. ground beef
1/2 c. chopped onion
1 pkg. taco seasoning mix
(1 1/4 oz.)
1 1/2 c. water
1 c. coarsely crushed tortilla
chips (about 2 oz.)
1 1/2 c. shredded Cheddar
cheese (about 6 oz.)
1/2 c. chopped green pepper

Brown ground beef with onion in skillet. Drain. Add
seasoning mix and water to meat. Bring to a boil, reduce heat
and simmer 15 minutes. Preheat oven to 350 degrees. Spread corn
chips on bottom of 8 x 8-inch baking dish. Pour meat sauce
evenly over chips. Sprinkle cheese and green pepper over meat.
Bake in oven for 20 minutes or long enough to melt cheese and
heat through. Let stand 5 minutes before serving. Yield: 4
1/2 cups (9 servings). Exchanges per 1/2-cup serving: 2
medium-fat meat, 1/2 vegetable and 1 fat. Estimated nutrients
