MEAT LOAF 1 1/2 lb. ground beef 1 c. fine dry bread crumbs 2 eggs 1 (8 oz.) can tomato sauce 1/2 c. chopped onion 2 Tbsp. chopped green pepper 1 1/2 tsp. salt 1 medium bay leaf, crushed dash of thyme dash of marjoram Preheat oven to 350 degrees. Combine all ingredients; mix well. Pat into 9-inch loaf pan. Bake in oven for 1 hour. Yield: 6 servings. Exchanges per 1 1/2-inch slice serving: 3 medium-fat meat, 1 vegetable, 1/2 bread and 1/2 fat. Estimated nutrients per serving: Cal. 335, Fat 19, Cho. 16, Na. 1040, Pr. 25 and K 653. Variation: For a smaller family, this recipe may be divided into 2 or 3 small loaves. One loaf can be used immedi- ately and the others frozen. Be sure to label each loaf with the number of servings and exchanges per serving. One-half of recipe or 2 loaves equals 3-serving loaf. One-third of recipe or 3 loaves equals 2-serving loaf.
