CHICKEN AND GREEN PEPPERS
(Low Calorie)
12 oz. skinless, boned chicken
breasts
3 Tbsp. soy sauce
3 Tbsp. apple juice
1 Tbsp. vegetable oil
2 Tbsp. fresh ginger or 1 tsp.
dry powdered ginger
1 clove garlic or equal amount
of garlic powder
1 large onion, diced
4 medium or 3 large green
peppers, chopped
sesame seeds (optional)

Marinate chicken in soy sauce and reserve any marinade.
Cook chicken in apple juice and vegetable oil in a large
skillet until almost done. Add ginger, garlic and onion. Stir
and then add green peppers. Cook until vegetables are crisp
tender and chicken is done, stirring and turning often. Add
reserved marinade and stir while still over heat. This may be
served plain, garnished with sesame seeds or over Ramen noo-
dles, Chinese vermicelli or rice.
