LOW CALORIE CHEESE CAKE 4 eggs 1/2 c. flour 1 c. undiluted evaporated milk 1 Tbsp. lemon juice 1 tsp. vanilla 1 tsp. grated lemon rind 1/2 tsp. salt 60 drops sweetener 2 c. cottage cheese nutmeg 2 graham crackers Preheat oven to 250 degrees. Place eggs in bowl and beat lightly. Stir in flour, add milk, lemon juice, vanilla, lemon rind, salt and sweetener. Blend well. Add cottage cheese gradually, stirring after each addition to remove lumps. Force through medium fine strainer and stir mixture again. Pour into lightly greased 9-inch pie pan and sprinkle with nutmeg. Cover with well crushed graham crackers. Bake at 250 degrees for 1 hour. Turn off oven and allow cake to remain in oven 1 hour.
