CHICKEN SPAGHETTI vegetable cooking spray 1/4 c. plus 2 Tbsp. diced onion 1/2 c. diced celery 1/4 c. diced green pepper 1 clove garlic, minced 1 (16 oz.) can tomatoes, undrained and chopped 1/4 tsp. paprika 1/4 tsp. chili powder 1/4 tsp. ground black pepper 1/8 tsp. red pepper 8 oz. skinned, boned, uncooked chicken breast, cut into bite-size pieces 1 c. hot cooked vermicelli (cooked without salt or fat) parsley sprigs (optional) Coat a large skillet with cooking spray. Place over medium-high heat until hot. Add onion, celery, green pepper and garlic. Saute until tender. Stir in tomatoes, paprika, chili powder, ground black pepper and red pepper. Cover. Reduce heat and simmer 15 minutes. Add chicken. Cover and simmer 15 minutes. Serve over vermicelli and garnish with parsley, if desired. Yield: 2 servings; 219 calories per 1/2 cup vermicelli.
