CRUNCHY COLESLAW 4 c. shredded cabbage 1 c. shredded carrots 1/3 c. chopped onion 1 Tbsp. vegetable oil 1/2 tsp. celery seed 1 (6 oz.) can frozen unsweetened apple juice concentrate, thawed and undiluted 1/4 c. cider vinegar 1/2 tsp. prepared mustard Combine cabbage, carrots and onion in a large bowl; set aside. Combine remaining ingredients in a jar. Cover tightly and shake vigorously. Pour over cabbage mixture; toss gently to coat. Cover and chill 8 hours. Yield: 6 servings (about 80 calories per 3/4 cup serving).
