LOW CALORIE MEDIUM WHITE SAUCE

1 c. water
1/2 c. instant nonfat dry milk
powder
1 1/2 Tbsp. all-purpose flour
1/4 tsp. salt
pinch of white pepper
3 drops butter flavoring

Combine water, dry milk powder and flour in a heavy
saucepan, stirring until smooth. Cook over medium heat,
stirring constantly, until mixture is thickened and bubbly.
Stir in remaining ingredients. Yield: 1 cup; 16 calories per
tablespoon.
Variation - Cheese Sauce: Add 1/4 cup (2 ounces)
shredded cheese and 1/8 teaspoon dry mustard to low-calorie
medium white sauce. Cook and stir until cheese melts. Yield:
1 cup plus 2 tablespoons. Calories: 27 per teaspoon.
