PLANTATION PORK CHOPS 6 lean pork chops (about 1/2-inch thick) salt and pepper 2 Tbsp. vegetable oil 1 c. each chopped onions and green peppers 1 1/2 c. uncooked rice 3 c. boiling chicken broth 1 Tbsp. Worcestershire sauce 3/4 tsp. each salt and poultry seasoning 1 c. frozen green peas Season chops with salt and pepper and brown on each side in oil. Remove chops. Drain off excess fat. Add remaining ingredients, except peas, to pan. Stir to loosen brown parti- cles. Add peas. (If pan is not ovenproof, turn into casse- role.) Place chops over rice mixture. Cover and bake at 350 degrees for 30 minutes or until meat and rice are tender and liquid is absorbed. Fluff rice lightly with a fork. Makes 6 servings. Calories per serving: 373.
