SPINACH QUICHE 2 oz. grated cheese 6 tsp. flour 1/4 tsp. salt 1/4 tsp. dry mustard 2 Tbsp. oleo 1/2 c. evaporated skim milk 1/4 c. water 1 tsp. onion flakes 1/2 c. mushrooms, drained 1 tsp. salt dash of nutmeg and pepper 2 medium eggs, beaten 10 oz. chopped spinach, cooked and drained Mix cheese, flour, salt, dry mustard and oleo. Press in pie pan. In pot, mix milk, water, onion flakes, mushrooms and seasonings. Simmer 1 minute. Combine eggs and spinach. Gradually add hot milk mixture to eggs and spinach. Stir. Pour in pie pan. Bake at 400 degrees for 15 minutes or 325 degrees for 25 minutes. Serves 2.
