ZUCCHINI LASAGNA (Microwave) 6 c. sliced zucchini 1/4 c. water 1 lb. ground beef (lean) 2 cans tomato sauce (8 oz.) 1/4 lb. chopped mushrooms 1 small onion, minced 1 clove garlic, minced 1 tsp. basil 1/2 tsp. oregano 1/2 tsp. thyme 1/2 tsp. salt 1/2 tsp. pepper 1/4 c. breadcrumbs 12 oz. low-fat cottage cheese 4 oz. shredded Mozzarella cheese 1/3 c. grated Parmesan cheese Place zucchini in 1 1/2 quart microwave baking dish. Add water. Cook, covered, on High 6 to 7 minutes. Drain and set aside. Crumble beef into 2 quart glass mixing bowl. Cook on High 4 minutes, stirring halfway through cooking time. Pour off drippings. Combine tomato sauce, mushrooms, onion, garlic, basil, oregano, thyme, salt and pepper. Cook on High 6 to 8 minutes. Layer 1/3 of zucchini in 11 x 7 x 1 1/2-inch baking dish. Sprinkle with a tablespoon breadcrumbs and top with 1/3 of meat mixture and 1/2 of cottage cheese and Mozzarella cheese. Repeat for second layer, ending with zucchini, topped with meat, crumbs and Parmesan cheese. Cover with waxed paper and cook on High 10 to 12 minutes. Let stand 5 to 10 minutes before serving.
