COTTAGE CHEESY COLESLAW

2 c. shredded cabbage
1/2 c. shredded carrot
2 tsp. chopped green pepper
1/2 c. low-fat cottage cheese
2 Tbsp. low calorie creamy
cucumber salad dressing
1/4 tsp. salt

In a bowl toss together cabbage, carrot and green
pepper. In a blender container combine cottage cheese, salad
dressing and 1/4 teaspoon salt. Cover and blend until smooth.
Toss cheese mixture with cabbage mixture until all ingredients
are well coated. Cover; chill for several hours. Makes 4
servings about 57 calories per serving.
