MUSHROOM PUFF

4 slices white bread
1/2 c. diced green pepper
1/4 c. chopped onion
4 eggs, beaten
1/4 tsp. salt
dash of nutmeg
4 oz. can mushrooms
1 tsp. prepared mustard
4 oz. shredded Swiss cheese
2 c. evaporated skim milk
1/8 tsp. pepper

Place bread on bottom of 8 x 8-inch square pan. Heat
mushrooms, peppers and onions. In a Teflon pan saute slightly
until soft. Add mustard and spread mixture over bread. Mix
eggs and milk together in a small bowl with wire whisk. Add
cheese. Pour over bread. Bake at 350 degrees for 35 minutes or until
knife inserted comes out clean.
