ORANGE-SPIKED ZUCCHINI AND CARROTS 1 lb. zucchini, cut into 1/4-inch slices 10 oz. pkg. frozen sliced carrots, defrosted 1 c. unsweetened orange juice 1 stalk celery, finely chopped 2 Tbsp. chopped onion salt and pepper Combine all ingredients in nonstick saucepan. Simmer, covered, 10 to 12 minutes, or until zucchini is tender. Uncover and simmer until most of liquid is evaporated. Makes 7 servings, 48 calories each.
