STEAK STROGANOFF 1 1/2 lb. boneless round steak, fat trimmed off 1 Tbsp. safflower oil 1 Tbsp. instant-blend flour 1/2 c. plain low-fat yogurt 1/4 c. sherry salt and pepper to taste 1/2 lb. mushrooms, sliced 1 onion, sliced Cut steak into thin slices. Spray large nonstick skillet with cooking spray. Combine meat, oil, mushrooms, onion, salt and pepper in skillet. Cook over moderate heat until meat is well browned. Mix flour with yogurt. Stir into meat mixture. Cook, stirring constantly until thickened. Add sherry. Simmer 3 minutes. Makes 6 servings, 269.9 calories.
