DIET STUFFING FOR FISH

1 Tbsp. safflower oil
3/4 c. chopped onion
2 1/4 c. chopped pared apple
1/3 c. celery, chopped
1/3 c. chopped parsley
2 Tbsp. lemon juice
1/4 tsp. salt
1/8 tsp. thyme

Heat oil in nonstick skillet sprayed with cooking spray.
Add onions to skillet. Saute until tender. Combine onions
with remaining ingredients. Mix thoroughly. Makes 3 cups, 58
calories per 1/2 cup.
