BAKED TUNA LOAF WITH CUCUMBER SAUCE

2 (6 1/2 or 7 oz.) cans tuna,
packed in water, drained
3/4 c. finely chopped celery
1/2 c. skim milk
3/4 c. Quaker oats (quick or
old fashioned, uncooked)
1/4 c. egg substitute or 1 egg
1/8 tsp. pepper

Cucumber Sauce:
1 (8 oz.) container plain
yogurt
1/2 medium cucumber, finely
chopped
2 Tbsp. chopped fresh dill or
1 tsp. dried dill weed
1 tsp. minced onion

Heat oven to 350 degrees. Coat 8 x 4-inch loaf pan with
vegetable oil cooking spray or oil lightly. Flake tuna; add
remaining ingredients, mix well. Pat into prepared pan. Bake
40 minutes; let stand 5 minutes before slicing. Serve warm or
cold with Cucumber Sauce. Makes 8 servings.
Cucumber Sauce: In small bowl combine all ingredients,
mix well. Chill. Makes 1 1/3 cups; contains 118 calories per
serving.
