TURKEY TACOS 1 tsp. vegetable oil 1 medium onion, diced 2 cloves garlic, minced 2 tsp. chili powder 1 (16 oz.) can tomatoes, drained 1 (4 oz.) can mild chopped green chilies, drained 1 tsp. cider vinegar 1/2 tsp. salt 3/4 lb. cooked turkey, cut in julienne strips (about 2 c.) 1 Tbsp. chopped fresh coriander leaves (optional) 8 taco shells shredded lettuce 1 c. shredded Cheddar cheese 1 small onion, chopped In large skillet, heat oil over medium-high heat. Saute onion 5 minutes until tender. Add garlic and chili powder; cook stirring 1 minute. Add tomatoes, green chilies, vinegar and salt. Reduce heat to medium-low; cook, stirring to break up tomatoes, 5 minutes or until sauce thickens. Add turkey and heat through. Stir in coriander, if desired. To serve, heat taco shells according to package directions. Fill shells with turkey mixture. Top with lettuce, cheese and onion.
