LAYERED PEACH DESSERT

1 (16 oz.) can peach slices
(juice packed), drained and
cut up
1 (4 serving) envelope low
calorie lemon or raspberry
gelatin
3/4 c. boiling water
3/4 c. cold water
1/4 c. chilled evaporated skim
milk
a few drops of almond extract

Dissolve gelatin in boiling water. Stir in cold water.
Add 1 cup of gelatin mixture to peaches; chill until partially
set. Chill remaining gelatin until partially set (consistency
of unbeaten egg whites). Add evaporated skim milk and almond
extract to gelatin without the peaches. Beat until fluffy. In
6 parfait glasses layer the 2 gelatin mixtures, ending with
whipped gelatin. Chill thoroughly. Serves 6.
