FRESH FRUIT PIE (DIABETIC) 3 Tbsp. cornstarch dash of salt 1 1/2 c. unsweetened orange juice 1/4 c. lemon juice 1 tsp. grated lemon rind 2 pkg. Equal or more to taste 6 c. assorted cut up fresh fruit, drained 9-inch baked pie shell In saucepan, mix cornstarch and salt; gradually add orange juice. Stir until smooth. Bring to boil over medium heat, stirring constantly. Boil 1 minute. Remove from heat; stir in lemon juice and grated lemon rind. Cool completely. Add 2 packages Equal or more to taste. Fold in fresh fruit, drained. Turn into pie shell. Chill 4 hours. Can use white grapes, peaches, pineapple, bananas, nectarines or straw- berries.
