BERTHA COLLINS SUGAR-FREE MINCEMEAT

4 lb. pork loin or combination
of pork and beef roast
chopped apples
chopped pears
4 lb. raisins
2 lb. currants
1 lb. cranberries
1 lb. cherries
1 Tbsp. cinnamon
1 tsp. cloves
1 Tbsp. salt
1 can frozen unsweetened grape
juice concentrate
2 qt. unsweetened apple juice

Use 3 times as many chopped apples as other fruits.
Boil meat in water to cover until done. Remove meat and grind
it into rough mixture. Return meat to the water and refriger-
ate overnight. Skim excess fat. Add other ingredients and
cook until done and thick about 3 to 4 hours. Pack in jars.
Pressure can 25 minutes on 10 pounds pressure. Makes about 15
quarts.
