CHICKEN FLORENTINE

2 whole chicken breasts
1 (10 oz.) pkg. fresh spinach
or 2 pkg. frozen, chopped
spinach
2 oz. shredded Swiss cheese
1 medium onion, chopped
Pam or Weight Watchers

Skin, debone and halve chicken breasts into 4 pieces.
Pound into cutlets about 1/8-inch thick. Cook spinach and
drain well. Chop. If frozen spinach, drain well. Saute in
Teflon pan (with Pam) the onion until soft. Add well drained
spinach. Place 1/4 mixture in each cutlet and roll cutlet.
Place in baking dish. Grate cheese over all. Bake at 350 degrees for
35 minutes until golden.
