SUGAR-FREE APPLE PIE 4 c. sliced apples (sweet variety best) 1/2 c. frozen apple juice concentrate, undiluted 1 1/2 to 2 tsp. tapioca, cornstarch or flour 1/2 tsp. lemon juice (optional) 1/2 to 1 tsp. cinnamon, nutmeg or apple pie spice pastry for 2 crust pie Make pastry for 8 or 9-inch pie plate. Roll thin. Mix apples, juice concentrate, thickener and spices. Stir until well coated. Add lemon juice, if desired (keeps apples lighter colored). Pour into pastry-lined pie pan, top with pastry crust. Seal edges, cut slits in top crust to allow steam to escape. Bake at 425 degrees for 40 to 45 minutes, until golden brown. Makes 8 servings.
