ICE MILK 2 tsp. unflavored gelatin 2 Tbsp. cold water 2/3 c. evaporated skim milk, chilled 1/4 c. sugar 1 tsp. vanilla Sprinkle gelatin on cold water in saucepan to soften; stir over low heat until gelatin is dissolved. Beat milk, sugar and vanilla in chilled small mixer bowl on high speed until very thick and fluffy, about 2 minutes. Beat in gelatin gradually until mixture is very stiff (3 minutes). Pour into ice cube tray.
