SUMMERTIME CHICKEN LOAF (110 Calories Per Serving) 1 envelope unflavored gelatin 1/4 c. cold water 2 chicken bouillon cubes 1 3/4 c. boiling water 1 c. cut-up, cooked chicken 2 Tbsp. lemon juice 1/2 green pepper, cut up 1 Tbsp. chopped onion 2 canned or fresh pimientos, chopped 1 Tbsp. dried parsley flakes (can be fresh) 2 stalks celery with leaves, chopped 1/2 tsp. thyme or basil Soften gelatin in cold water in blender container. Add bouillon cubes and boiling water. Run on low speed until dissolved. Add chicken, cover and chop (maybe 30 seconds). Empty into mixing bowl and chill until thick. Put remaining ingredients in blender and run on high until chopped. If necessary, open and push to blade with spatula. Fold vegetables into gelatin mixture. Pour into oiled 9 x 5 x 3-inch loaf pan and chill until firm. Makes 8 servings.
