DIABETIC BROCCOLI AND RICE CASSEROLE

1 (10 oz.) pkg. chopped frozen
broccoli
1/2 c. chopped onions
1/2 c. chopped celery
1 (10 3/4 oz.) can cream of
chicken soup
1/4 c. shredded carrots
1 c. grated low-fat cheese
(American)
1 1/2 c. cooked rice
seasoned Mrs. Dash
2 Tbsp. fine bread crumbs

Cook broccoli almost done; drain. Mix all ingredients
(except bread crumbs). Pour into nonstick 1 1/2 quart casse-
role. Top with bread crumbs. Bake at 350 degrees for 45 to 50
minutes.
