DIABETIC JELLO SALAD 1 box sugar free lime jello 1 box sugar-free strawberry jello 1 envelope unflavored gelatin 6 to 8 packets Sweet 'N Low 1 (12 oz.) carton low-fat cottage cheese 1 (12 oz.) can unsweetened crushed pineapple Fix lime jello and put into a 9 x 9 x 2-inch dish. Refrigerate until firm. Put cottage cheese in blender until smooth. Drain pineapple (save juice). Soften unflavored gelatin in 1/4 cup pineapple juice. Heat remaining juice and mix into softened gelatin. Mix juice, gelatin mixture with cottage cheese; add Sweet 'N Low and crushed pineapple. Mix and pour on top of set jello. Refrigerate until set. Fix strawberry jello and pour over cottage cheese layer. Refriger- ate until firm.
